Turkey Pumpkin Chili - October 2018

A delicious way to kick off the season.

Ingredients-

·2 pound ground turkey

·2 (15 ounce) cans of kidney chili beans undrained

·1 small (6 inch) pumpkin

·1 large green bell pepper chopped

·1 medium onion chopped

·2 cloves garlic peeled and pressed

·3 cups low sodium V8 vegetable juice

·1 (10 ounce) can diced tomatoes with green chiles undrained

·1 (4.5 ounce) can green chiles undrained

·1 packet of chili seasoning

·2 tablespoons pumpkin pie spice

·1 tablespoon brown sugar

·1 teaspoon cumin

·salt and pepper to taste


Preparation-

  • Heat oven to 350 degrees.
  • Cut pumpkin in half, scoop out seeds with metal spoon. Sprinkle flesh with salt and drizzle with olive oil. Place on baking sheet cut side down. Pierce with fork and bake for 30 minutes.
  • Let pumpkin cool and scoop out flesh and puree in food processor.
  • In a large pot over medium heat, cook meat until brown and drain.
  • Stir in remaining ingredients including pumpkin puree and seasonings. Simmer 1 hour.
