Spicy Chicken Quesadilla - May 2014

Celebrate Cinco de Mayo with the classic!

Ingredients-
- 1/4 Cup Green Onions Thinly Sliced
- 2
Tablespoons Cilantro Chopped
- 3 Tablespoons Pickled Jalapenos Coarsely Chopped
- 1 ½
Cups Cooked Chicken Breast Chopped
- 1
Cup Canned Black Beans- Rinsed and Drained
- Four 8” Flour Tortillas
- 1 ½
Cups Reduced-fat Shredded Cheddar Cheese
- Cooking Spray
- 3/4 Cup of Salsa

1 cup reduced fat sour cream
-
1 ripe avocado
Preparation-

- Preheat the oven to 225 deg. F
- Combine the first 4 ingredients in a
small bowl and stir until blended
- Heat a large nonstick skillet over medium-high heat. Coat pan with cooking spray.
- Sprinkle with ¼ of the cheese, ¼ cup of the black beans and 2 tablespoons of green onion mixture. Fold in half and cook for 2 minutes on each side of until lightly browned.
- Place quesadilla on a baking sheet and put into oven to keep warm. Repeat procedure with remaining quesadillas.
- Cut each quesadilla into quarters. Serve with salsa, avocado slices and any remaining onion mixture with sour cream.
