Spicy Chicken Quesadilla - May 2014

Celebrate Cinco de Mayo with the classic!

Ingredients-

  • 1/4 Cup Green Onions Thinly Sliced
  • 2 Tablespoons Cilantro Chopped
  • 3 Tablespoons Pickled Jalapenos Coarsely Chopped
  • 1 ½ Cups Cooked Chicken Breast Chopped
  • 1 Cup Canned Black Beans- Rinsed and Drained
  • Four 8” Flour Tortillas
  • 1 ½ Cups Reduced-fat Shredded Cheddar Cheese
  • Cooking Spray
  • 3/4 Cup of Salsa
  • 1 cup reduced fat sour cream


  • 1 ripe avocado

Preparation-
  • Preheat the oven to 225 deg. F
  • Combine the first 4 ingredients in a small bowl and stir until blended
  • Heat a large nonstick skillet over medium-high heat. Coat pan with cooking spray.
  • Sprinkle with ¼ of the cheese, ¼ cup of the black beans and 2 tablespoons of green onion mixture. Fold in half and cook for 2 minutes on each side of until lightly browned.
  • Place quesadilla on a baking sheet and put into oven to keep warm. Repeat procedure with remaining quesadillas.
  • Cut each quesadilla into quarters. Serve with salsa, avocado slices and any remaining onion mixture with sour cream.
