Bacon Swiss Chard Potatoes Au Gratin - August 2019

Ingredients-
● 10 oz bacon
● 1 tbsp garlic
● 1 ½ lbs Russet potatoes
● 7 Swiss chard, large leaves
● 1 cup chicken broth, unsalted
● 1 tbsp olive oil
● 2 tbsp butter
● 8oz swiss cheese, grated
● salt & pepper to taste
Directions-
● Add olive oil, garlic and Swiss chard to a large skillet on medium heat and wilt chard (about 2 minutes)
● Place bacon slices on the 3 or 4 layers of paper towel towels on a microwave safe platter, cover w/ additional layers of paper towel, microwave for 4 minutes to slightly cook the bacon and render some of the fat
● Let the bacon cool slightly, then chop into bite size pieces
● Preheat oven to 425° and lightly oil an 8x8” casserole dish
● Place a layer of potato slices in the dish, lightly salt and pepper, then add 1/3 of the bacon, 1/3 of the chard and 1/3 of the cheese
● Repeat 2 more layers of ingredients
● Pour in the chicken broth, then top with thinly sliced butter (butter optional)
● Cover the casserole with foil and bake for 15 minutes
● Remove the foil and bake for an additional 30 minutes until the cheese starts to brown and the potatoes are fork tender
● Serve warm. Enjoy!
